The incorporation of functional ingredients, such as prebiotics and probiotics in food matrices, became a common practice the human diet to improve nutritional value product itself. Worldwide, skim milk (SKM) is one most consumed comprising all essential nutrients desired for balanced diet. Thus, modulation gut microbiota by SKM supplemented with different well-known ingredients was evaluated. Four well-studied prebiotics, fructo-oligosaccharides (FOS), galacto-oligosaccharides (GOS), mannan-oligosaccharides (MOS) inulin, probiotic product, UL-250® (Saccharomyces boulardii) were added at 1% (w/v) subjected gastrointestinal vitro model. impact each combination on profile their fermentation metabolites (i.e., short-chain fatty acids–SCFA) assessed quantitative polymerase chain reaction (qPCR) high-performance liquid chromatography (HPLC), respectively. addition FOS had promising results, showing prebiotic potential promoting growth Lactobacillus, Bifidobacterium, Clostridium cluster IV. Moreover, increment SCFA levels decrease total ammonia nitrogen observed throughout colonic fermentation. Overall, these results demonstrate that + beneficial host’s health positively modulating microbiota.
